Should I use Cat 5e or Cat 6?
Following the maxim of installing the most advanced product available, the majority of end users are choosing to install cat 6.
Unfortunately, there is no application in existence that can take advantage of the higher bandwidth available on the cat 6 cable on a 100 meter horizontal cable drop.  Only in the coming POE+ standards of over 30 watts will the 23 gauge cat 6 provide any improvement.  Cat 6 is also capable of transmitting 10 gigabit Ethernet up to 30 meters, but alien crosstalk can become a problem.  
It is difficult to imagine a circumstance where anyone would need 10 gigabits per second of data to the desktop.  The vast majority of networks are still running on 10/100 switches with 1 gigabit backbones.  Even uncompressed HD video won’t require more than 40 or 50 megabits.  
Of course, there are certain applications that work with immense file sizes and 1000Base-T has been serving these well for over a decade.  I have yet to encounter anyone who had trouble with these data rates over even the most minimally compliant cat 5e cable.  At my house, I’ve been running a 100Base-T network over cat 3 cable without issue for over 10 years. 
So should you go with Cat 5e or Cat 6?  I would only go with cat 6 if you’re reasonably certain the cable will remain in place for at least 10 years, you might need 10 gigabits to the desktop on short runs, you made need to power appliances with POE+ and the difficulty of replacing the cable would be prohibitive.  
Otherwise, it is only a matter of time before optical processors become available, and we’ll all need fiber to the desktop to network them.
